Savoury madeleine cakes with Palacios chorizo
Here’s how to make some delicious savoury madeleine cakes with Palacios chorizo.

INGREDIENTS
- 1 Palacios chorizo
- 3 medium-sized potatoes
- 300 g Emmental cheese
- 8 eggs
- Salt
- Sweet paprika
PREPARATION
Peel the potatoes, dice them very finely, and set aside. Then remove the skin of the Palacios chorizo, cut the chorizo in half and dice it very finely. Heat a pan with a splash of oil, fry the chorizo for 4 minutes and then add the potato. Mix well and fry for another 5 minutes, until the potato and chorizo are well-cooked.
Then drain the mixture, making sure you remove as much of the oil as possible. Next, take a bowl, beat the 8 eggs and add a pinch of salt and sweet paprika.
Take a muffin tray, add a base layer of cheese, followed by the mixture of chorizo, potato and egg, then add another layer of cheese.
Bake for 15-20 minutes at a temperature of 180°C, and voilà! Your savoury madeleine cakes are ready!
