Poached eggs with peas and Palacios chorizo

This recipe is easy to make and extremely tasty.

INGREDIENTS

  • 4 eggs
  • 500 g frozen peas
  • 1 small onion
  • 2 cloves of garlic
  • Palacios chorizo
  • Extra-virgin olive oil
  • Salt
  • Black pepper

PREPARATION

Finely chop the garlic and onion, then heat some extra-virgin olive oil in a non-stick cooking pot.

Sauté the garlic and onion until the latter becomes transparent.

Cut the Palacios chorizo into thin slices, add them to the pot and sauté for 3 minutes (or until they start to brown).

Add the frozen peas and stir the mixture well.

Season with salt and pepper and cook for a further 5 minutes, stirring occasionally.

Finally, crack the eggs and add them to the pot. Add some salt, place the lid on the pot and allow the mixture to solidify. Try to keep the yolk soft, so that each guest can break it and spread it over their peas.
