Langoustine and Palacios roast chicken skewers

INGREDIENTS
- 16 langoustines
- ½ breast of Palacios roast chicken
- 12 Brussels sprouts
- 2-3 shallots
- 1 tablespoon of refined corn flour
- ½ glass of brandy
- Water
- 3 tablespoons of extra-virgin olive oil
- Salt
PREPARATION
Peel the langoustines and set them aside. Also set aside the shells and heads, as we will use them later for the sauce.
Chop the Palacios roast chicken breast into pieces and set aside.
Blanch the Brussels sprouts for 2-3 minutes in a cooking pot with water and salt. Drain and set aside.
To make the sauce, chop the shallots and sauté them in a pan with 2 tablespoons of olive oil, along with the heads and shells of the langoustines. Add the brandy and flambé. Then cover with water, season, and leave to cook for 10-15 minutes. Then blend, strain, and thicken the sauce with the refined corn flour diluted in cold water. Sprinkle with chopped parsley and set aside.
On each skewer place a Brussels sprout, a piece of Palacios roast chicken, and 2 langoustines. Then repeat twice.
Season with salt and pepper and lightly fry in a pan with a tablespoon of oil.
Serve the skewers accompanied by the sauce.
