Pumplin stuffed with Strips

INGREDIENTS
- 1 pumpkin peanut
- Plant-based strips
- 1 red onion
- 10 dried tomatoes
- 50 g of basmati rice
- 50 grams of raisins
- 50 gr of shelled walnuts
- Olive oil
- Salt and pepper
- 1 teaspoon cinnamon
PREPARATION
Cut the pumpkin lengthwise and remove the seeds. Place the two halves in a baking dish, season with salt and pepper, add oil and bake for 1 hour. Remove from the oven and remove part of the pulp from the pumpkin to form the hole for the filling. Put the chopped onion in a pan with a drizzle of olive oil and cook until tender. Add the Strips, the chopped dried tomatoes, the raisins, the chopped walnuts, the rice and the pumpkin pulp that we have removed. Sauté everything together, rectify the salt and add the cinnamon. Fill the pumpkin. Wrap in baking paper and bake for about 40 min.
