Lamb’s lettuce, pasta and Palacios roast chicken salad

INGREDIENTS
- 2 leaves of red cabbage
- 1 slice of pineapple
- 50 g lamb’s lettuce
- 130 g Palacios roast chicken
- 50 g pasta
- 1 tablespoon of brewer’s yeast
- 2 tablespoons of extra-virgin olive oil
- 1 tablespoon of vinegar
- Basil
- Salt
PREPARATION
Boil the pasta in plenty of water with a pinch of salt.
Wash the lamb’s lettuce, then dry and set aside. Wash the red cabbage and cut into fine julienne strips.
Peel the slice of pineapple, remove the centre and cut into small pieces.
Add a tablespoon of olive oil to a pan and lightly fry the Palacios roast chicken.
Place all the ingredients in a bowl and dress with a tablespoon of olive oil and a tablespoon of vinegar, plus the basil and salt.
