Butter beans with Palacios chorizo
This recipe is not only simple, but also extremely nutritious.

INGREDIENTS
- 250 g butter beans
- 1 loaf of bread
- 1 tin of chopped tomatoes
- Palacios chorizo
- 1 spring onion
- 2 carrots
- 1 green pepper
- 2 cloves of garlic
- Pickled chilli peppers
- Extra-virgin olive oil
- 1 teaspoon of paprika
- Salt
PREPARATION
Cut the Palacios chorizo into medallions and fry them in a pan with a dash of oil. Drain and set aside.
Put the butter beans in a pot and boil them for approximately 15 minutes.
Finely chop the spring onion, garlic, carrots and green pepper and sauté them in a cooking pot with a splash of oil. Season.
Add the chopped tomato, the medallions of Palacios chorizo and the paprika. Cook for 15 minutes.
Add the butter beans and simmer the mixture for a further 5-6 minutes.
Place the picked chilli peppers on a plate, dress them in oil and season.
Serve the butter beans accompanied by the chilli peppers and bread.
