Palacios chorizo and mushroom mini-terrines

INGREDIENTS
- 8 whole fresh mushrooms
- 1 onion
- 1 cup of milk
- 2 tablespoons of single cream
- 2 eggs
- 4 tablespoons of grated cheese
- Grated Parmesan cheese
- 1 Palacios chorizo
- Salt and pepper
- Olive oil
- 1 tablespoon of tomato passata (to garnish)
PREPARATION
Wash the mushrooms and cut them into strips, then chop the onion very finely. Season with salt and pepper, then fry the mushrooms and onion in a pan with a tablespoon of olive oil.
Prepare the individual moulds on a baking tray and fill them with the fried mushrooms and onion. Add the grated cheese and the Palacios chorizo, chopped into small pieces.
Then beat the eggs with the milk and fill each mould with the mixture up to the top.
Preheat the oven to 180°C, place the baking tray inside the oven and bake the terrines in a bain-marie for 40 minutes. Use a small knife to check they have set.
Leave the terrines to cool a little, then remove the moulds. Garnish with a dot of tomato passata on top.
