Lentils with Palacios chorizo
This legume-based dish is a traditional recipe from our region and is very easy to make.

INGREDIENTS
- 400 g lentils
- ½ Palacios chorizo
- 1 spring onion
- 1 leek
- 1 carrot
- 1 green pepper
- 2 cloves of garlic
- Extra-virgin olive oil
PREPARATION
Finely chop the garlic, spring onion, leek, green pepper and carrot and fry them in a pan.
Heat some water in a pot, add the chorizo and simmer for 15 minutes.
Add the lentils to the chorizo, covering them with plenty of water, and add a pinch of salt.
Place the lid on the pot and simmer the mixture for 10 minutes.
