Aubergines stuffed with cheese and Palacios chorizo
A tasty and highly nutritious recipe containing plenty of vegetables.

INGREDIENTS
- 2-4 aubergines
- 2 leeks
- 1 spring onion
- 2 cloves of garlic
- Cheese
- ½ Palacios chorizo
- Extra-virgin olive oil
- Salt
PREPARATION
Cut the aubergines in half and scoop out the flesh with a spoon, taking care not to tear the outer skin. Then boil the skins.
Finely chop the spring onion, leeks and garlic, and sauté them in a saucepan with a splash of oil. Chop and add the aubergine flesh and cook well. Place the resultant mixture in a bowl.
Cut the cheese and Palacios chorizo into pieces and add them to the bowl. Mix well and pour into the aubergine skins.
Place the stuffed aubergines on a baking tray and bake them at 180°C for 10 minutes.
